Mumbai Famous Vada Pav Recipe (Vada Pav Recipe in Hindi)

Ingredients for Vada Pav

  • Pav – 4
  • Potatoes – 3 (boiled)
  • Green Coriander – 2-3 tbsp (finely chopped)
  • Salt – ¼ tsp or as per taste
  • Turmeric powder – less than ¼ teaspoon
  • Red chilli powder – less than ¼ tsp
  • Mustard – ¼ tsp
  • Cumin – ¼ tsp
  • Curry leaves – 8-10
  • Lemon juice – 1 tsp
  • Ginger – 1 tsp (paste)
  • Green chilli – 1 (finely chopped)
  • Asafoetida – 1 pinch
  • Gram flour – 1 cup
  • Red chilli powder – 1
  • Salt – ¼ tsp or as per taste
  • Baking soda – 1 pinch
  • Turmeric powder – 1 pinch
  • Oil – for frying

Ingredients for Peanut Chutney

  • Roasted peanuts: ½ cup
  • Mango powder: ¼ tsp
  • Salt: ½ tsp (as per taste)
  • Asafoetida: 2 pinches
  • Red chilli powder: 1 tsp
  • Cumin: ½ tsp

How to make Mumbai Vad Pav

  • To make Mumbai’s famous and tasty Vada Pav, heat 2 spoons of oil in a pan.
  • When the oil is hot, add asafoetida, mustard seeds and fennel.
  • After this, add finely chopped onion and fry it and also add ginger-green chilli paste.
  • Add mashed boiled potatoes and fry well and add salt, turmeric powder, red chili powder, coriander powder.
  • After frying well, turn off the gas and prepare a paste by adding lemon juice.
  • Now take a vessel and add gram flour in it.
  • Add turmeric and a pinch of salt to it and prepare the solution by adding water little by little.
  • Now add soda to the solution and mix it well.
  • Then put oil in a pan and heat it.
  • Take the potato stuffing and prepare small balls of it.
  • Now dip each ball in the gram flour solution and then put it in the pan for frying. When the vadas become golden brown, take them out from the pan.
  • Now take a pav and apply garlic chutney on it and place a hot vada on it.

Make peanut chutney like this

  • Add cumin seeds in the pan and fry it lightly. Keep the gas very low.
  • When cumin seeds crackle, add asafoetida and peanuts and fry lightly. Turn off the gas.
  • Add peanuts, red chilli powder, salt and dry mango powder in a mixer jar and grind them.
  • Peanut chutney is ready.

Make Vada like this 

  • Put oil in the pan and keep it to heat.
  • Make round balls from the potato mixture and keep them in a plate.
  • After this, take a ball, dip it in gram flour batter and put it in oil to fry.
  • Fry as many balls as you can fit in the pan at one time.
  • When they turn golden brown, take them out in a paper napkin lined plate.
  • Fry all the balls in the same manner and take them out.

Now it is time to prepare Vada Pav. First of all, cut the pav from the middle. Make sure the pav remains connected and does not fall apart. After this, apply peanut chutney on one side of the pav and green coriander chutney on the other side and put the potato vada in the middle of the pav and press it lightly. Vada Pav is ready. Prepare all the Vada Pav in the same manner.
